The Pink Bourbon variety cultivated by Wilson Alba from the Huila region is a fruity, berry-like and refined fresh coffee.
Pink Bourbon Arabica is a variety grown only in the Huila region of Colombia. In the past few years, it has become a very popular competition coffee because its aromas are clearly bright, the taste is berry-like and juicy, and the variety produces a very balanced cup when roasted to the optimal roast level, which is around 2.25 (1-5) on the traditional scale.
We competed with this coffee in the Nordics Best Roaster competition in early March 2025, and among the ten finalists, we placed sixth best coffee.

Limited Sitio Santa Catarina Brazil is the fruit of the freshest harvest from our cooperative farm.
The coffee comes from a small farm in Sitio Santa Catarina, in the Pedralva province of Brazil. We have been buying coffee there since 2019, when we visited the farm and began collaborating with Alexandre Silva and Rodrigo Silva Pimenta .
We aim to increase our purchases from their farms year after year, and we are committed to purchasing their high-value small-batch varieties every year. This commitment allows us to experiment and test our coffee processing, as the farmers know that we will buy coffee anyway.
Freshly harvested coffee is a very balanced and full-bodied coffee: a rich mouthfeel brings a pleasant experience to coffee drinking. The coffee batch is anaerobically fermented, meaning the coffee berries are immersed in a water tank and allowed to ferment in an oxygen-free environment. This causes the coffee berry to ferment and the coffee bean itself to absorb interesting aromas.
After processing, the coffee is dried on a raised bed in the sun, constantly turning the dried berries. The aromas of the coffee include passion fruit, ripe berries and liqueur-like notes.
