Colombia, showcasing the sweetness of mango and the freshness of lime, joins Lehmus Roastery's Top Shelf selection

Lehmus Roastery is launching a new coffee selection, which we already got a taste of with the coffees at last year's Lesoilulaatiko.

The top shelf selection is a carefully curated collection of Lehmus Roastery's most valuable, refined and special limited edition coffees from around the world.

The top shelf products can be distinguished by the gold-plated label, because the leesous in these coffees is always at least 10/5. The coffees are only sold in the Lehmus Roastery online store and at the Satamatie 6 café.

The first package of 2021 to be put on the top shelf is Colombia Pink Bourbon. The coffee comes to us from the Alto Chino region From José López's Buena Vista farm.

The coffee is a Pink Bourbon Arabica variety, and its taste is delicately mango-like and sweet. The balanced experience is complemented by the acidity of lime towards the end of the taste. The coffee is of top quality, with a score of over 89. There were only two 69 kg bags of this coffee available, of which we managed to get one.

López has been working in coffee farming since he was 20. He previously worked on his parents' farm, but for the past seven years he has been running his own farm with his family. The farm, located at an altitude of 1,750 meters, mainly produces Pink Bourbon.

The coffee gets its aroma not only from the fertile soil but also from the processing method. The coffee berries are first fermented for 36 hours. After that, the berries are washed and dried for 20 days.

In the well-known coffee-producing region of Huila, coffee plantations are mainly spread at very high altitudes, and the coffees are traditionally sweet, acidic and multi-hued in their aromas. This world is also represented by the coffees from Buena Vista Farm.

What kind of variety is Pink Bourbon?

Lehmus Roastery has not previously had Pink Bourbon in its selection. Bourbon Arabica is a traditional variety that is very common in South and Central American countries. Bourbon is a reasonably high-yielding variety that thrives at altitudes of over 1000 meters.

The most common Bourbon varieties are Yellow Bourbon and Red Bourbon. Pink Bourbon is a variety native to Colombia and is characterized by a silky mouthfeel due to its high glucose content – ​​for example, Yellow Bourbon has more fructose, which produces a sweeter and more acidic taste.

For roasters, Pink Bourbon presents an interesting challenge, as the variety is dense in structure and its chemical composition is complex. It requires precision, among other things, in adjusting the initial roasting temperature, so that the coffee develops properly and the desired sweetness is brought out in the flavor. We roast Ylähylly coffees in small, six-kilo batches, so that we can maintain precise control over such a rare coffee.
