Kettu is making a comeback now in a double version: medium and dark roast in stores today

Lehmus Roastery's popular seasonal coffee, Kettu, is back today. There are two different Kettu roasts available this season: the familiar medium-dark roast from last year and the new dark urban city Kettu!

The winter medium-dark roast, launched last fall, was designed to be a coffee for the entire winter, but it was sold out in most stores before the turn of the year.

This year, production volumes have been increased and the goal is to still have plenty of coffee available to enjoy even in the middle of the winter season.

This year, Lehmus Roastery has introduced dark Kettu alongside the already traditional Kettu coffee.

In the regular City Roast, our inspiration animal is adventuring in the spruce forests of the Lappeenranta fortress ramparts, admiring the moon. In the dark Kettu coffee, the Repoman has already moved to the urban center of the city, where it observes its surroundings under the streetlight.

"This time we joked a bit about the city fox. Last year's foxes were in the fortress world, this year we wanted to bring the city foxes to the city to roam.

"Although the images themselves are from any city, the recent construction boom in Lappeenranta has of course served as a source of inspiration," Koskinen describes.

Coffee from near Rio de Janeiro

Kettu coffees use the same coffee beans as last year. The Fazenda IP farm is located in southeastern Brazil, outside the city of Carmo de Minas. In other words, the beans that arrive from the area between Rio de Janeiro and Sao Paulo are Yellow Bourbon.

They are grown at an altitude of 950-1200 meters above sea level. The harvest is ready in late summer, which means the coffee raw material is fresh and very tasty.
"We already decided last year that we wanted to make Kettua from the same beans this year as well, so we were able to monitor the harvest more closely than usual."

At this altitude, the coffee berries ripen slowly, allowing for gradual picking. The berries are picked as they ripen, rather than from the entire bush at once. This ensures that the coffee quality remains as high as required.

The beans have been processed using the honey method, while last year the processing was still natural. In other words, the current coffee aroma is slightly sweeter than last year.
"Due to the processing and otherwise, this year's coffee has slightly less acid and actually more sweetness than before. Overall, an excellent coffee," says roast master Visa Tuovinen .

Tuovinen says that this year Lehmus Roastery wanted to make an alternative to a medium-dark roast, as Lehmus Roastery's customer base includes many people who like darker roasts.

At the same time, there was an opportunity to create a new, darker coffee option.
"Dark Kettu has a roast level of 4/5, the same as our Lauritsala coffee, but it is not quite as dark as Lauritsala. This longer roasted Kettu emphasizes the dark cocoa. You can also smell caramelized nuts in the taste, " Tuovinen says.


Medium Roast Fox

Regular Kettu, medium-dark roast, or City Roast, has a full-bodied flavor. The aroma has chocolate with a slight fresh fruitiness. City Roast means a roast level of about 2.5/5.

Kettu coffee is recommended to be enjoyed in good company and served in beautiful cups.
"It's an excellent coffee this year too."

And what about the foxes in the fortress, are they roaming around the roastery?
"We haven't seen them on the ramparts yet. We're really looking forward to their arrival, and they'll probably start sniffing coffee closer when the snow comes," says Tuovinen.
