Coffee is brought to the Pedra Branca processing station from the surrounding mountain slopes. At the station, the coffee berries are peeled, dried using various processes, and cleaned, after which the coffee beans are sent to roasters around the world.
This year's harvest season has produced a roasted nutty flavor, a soft mouthfeel, and a pleasant citrus freshness in the coffees. Kettu coffees are available in well-stocked stores starting today, October 26, 2019.
Kettu coffee, medium roast – authentic and original
Fox coffee was inspired by the city foxes that nested on the back ramparts of the fortress in 2016. By the time autumn arrived, the fox family's cubs had grown to a brave age, and they would move along the ramparts of the fortress as the evenings grew darker – and even during the day.
In the early days, when our capacity was smaller, we roasted coffee until late at night. So the foxes' eyes often shone in the twilight as the last roaster watched the beans cool out of the windows.
The medium roast fox was created to offer the nutty, soft aromas typically found in the coffee regions of southern Brazil.
Dark Fox – Cosmopolitan Cousin
Dark Fox joined our selection in the fall of 2017. Although the coffee bean's own flavors are at their strongest in light coffees, many people prefer the softness and roundness of dark coffee.
That year, the foxes had also started moving more widely, and many spotted the Repo people in the yard of Prisma, among other places – where did the asphalt roads take the foxes?
We did various test roasts at the roastery and found a nice profile for the dark Kettu, with caramelized nuts, chocolate and dark aromas. This is how the Dark Kettu also saw the light of day.
Spice Fox – desired and popular with the public
We have never made flavored coffees before, because we have thought that the aromas of coffee are so interesting that presenting them is the best spice for this world.
Various liquid flavoring sprays don't sound like our roastery either.
Cardamom and Ceylon cinnamon are high-quality and valuable spices. When added in the right proportion to Kettu coffee, the end result is a taste and aroma that is as tempting as a freshly baked bun. Who could resist that?
